This is sooo good! My mom and sister introduced me to this pie. I hear it's called "Millionaire Pie" because "it's worth a million bucks!" Kathryn left out the pecans, and it was an amazingly refreshing, light, cool, and a tasty treat! Hope you enjoy it with your family as much as we did!

20 oz. can crushed pineapple, drained
8 oz. package cream cheese
8 oz. container Cool Whip
3/4 cup sugar
1 cup pecans
1 cup coconut (optional)
2 baked pie crusts (regular or graham cracker--I like graham cracker)
Beat cream cheese until soft. Add sugar and pineapple; beat until well blended. Fold in the remaining ingredients. Pour into pie crusts. Ready to serve or may refrigerate.
