Easy and tasty! This dish tickles your taste buds and is sure to please!
(Thank you Erin from The Sisters Cafe)
2 large boneless skinless chicken breasts (I do 8-9 frozen chicken tenders)
1 small bag frozen corn (I do more chicken, so I'll do a larger bag of corn and eyeball how much I want)
1 can black beans; rinsed and drained
1 small bag frozen corn (I do more chicken, so I'll do a larger bag of corn and eyeball how much I want)
1 can black beans; rinsed and drained
1 (16 oz.) jar salsa (My favorite is Pace Mild Salsa)
chopped cilantro (this is a must!)
shredded cheddar cheese
sour cream
tortilla chips
diced avocado (optional)
Pour frozen corn on bottom of crockpot. Place chicken breasts on top of corn and cover with black beans and jar of salsa. Cook on high for 1 hour (especially if you're dealing with frozen chicken), and then on low for 4 hours. Serve with tortilla chips and add toppings to individual servings.
Clover’s Notes:
*The chopped cilantro is what makes this dish incredible! Do it! And don't go skimpy!
*We used about 8 chicken tenders from Costco, and we only had to cook it for about 4 ½ hours.
*When I place some of this crockpot goodness on my plate, I top with chopped cilantro, then shredded cheese (and stir it a little bit so it can melt a little), and then I add a dollop of sour cream (to take out some of the heat and add creaminess). Mmmmmm!

*I like eating it with tortilla chips, but others like eating it in a flour tortilla burrito-style! Enjoy!
