When I was sick, a wonderful friend brought me this dish! (Thank you Dawn!) I have since made it for large family gatherings and have received only positive acclaim. The wonderful part is that it is SO easy to make!
Zesty Italian Chicken

6-8 boneless, skinless chicken breasts
2 cans cream of chicken soup
2-8 oz. packages of cream cheese, softened slightly
2 pkgs. Zesty Italian Dressing Mix (Good Seasons dry mix)
2 cups chicken broth or water
2 tsp. parsley
Put meat into 6 quart crock pot. Mix together soup, dry dressing mix, parsley, and broth or water, and cover chicken. Let cook on Low 4-6 hours.
One hour before serving, add cream cheese.
Serve over rice or linguine. (Will serve 12+)
Note: You can use the frozen chicken from Costco (either the breasts or the tenders), or you can thaw and cut up the chicken in small pieces before cooking. The chicken falls apart after it is cooked, but you can help break it up with a spoon. It also freezes well and is easy to reheat in the microwave.
