Craveable Chicken Nuggets

After tasting these, you would have no idea these chicken nuggets were healthy!
Our little nieces came over one night and claimed they "weren't hungry" before they tasted these. After they tried a bite they couldn't stop eating them!...You WILL reach for more. *Try eating these with our Honey Mustard Sauce for a yummy meal.


Craveable Chicken Nuggets (healthy and oh-so good!)

1 lb. boneless chicken tenders
1/2 cup unsweetened shredded coconut
1/4 cup arrowroot starch
1 tsp. sea salt
1/2 tsp. cinnamon
1/2 tsp. chili powder
coconut oil, for cooking


Melt coconut oil in large skillet over medium heat. Make sure there is a thin layer of coconut oil covering the surface. Combine the dry ingredients in a gallon-sized ziploc bag. Trim off the fat and cut the chicken tenders into bite-size pieces. Toss half of the chicken chunks in the ziploc bag until coated. Cook the coated chicken in skillet while tossing the remaining chicken chunks in the ziploc bag. Cook about 2-3 minutes, when the chicken is turning white about halfway up the sides. Use a wooden spatula to scoop the chicken and flip them over. Remove from skillet when chicken is cooked through. Place cooked chicken on paper towel to dry. Serve with honey or honey mustard sauce.
