Exciting Earthquake Cake

The top of the finished cake looks rocky and uneven like the aftermath of an earthquake! That's why it's called Earthquake Cake! The nuts and coconut represent rocks, the chocolate cake is the dirt, and the cream cheese mixture that cooks through the cake is like the lava from an earthquake! This cake is so fun and so tasty!

Earthquake Cake

1 cup flaked coconut
1 cup chopped pecans
German Chocolate cake mix
1/2 cup (1 stick) of butter, softened
8 oz. cream cheese, softened
2 cups powdered sugar
1 tsp. vanilla
16 oz. Cool Whip

Spray 9x13 pan. Layer coconut and chopped pecan pieces on bottom of pan.
Prepare German Chocolate cake mix as directed. Pour over nuts and coconut. (Do not stir!)
Combine butter, cream cheese, powdered sugar, and vanilla. Beat until smooth.
Drop by spoonfuls on top of cake. (Do not stir!) 

Bake at 350 for 45 minutes - 1 hour, or until a cake tester inserted between dollops comes out clean. Turn upside down on large cake tray. Let cool. Cover with 16 oz. Cool Whip. Enjoy!

Notes:
*Susan does a little more than 1 cup powdered sugar (instead of 2 cups).
*Diane recommended lining the cake pan with parchment paper for easier removal.
