Sweet Potato Shepherd's Pie

This is one of our FAVORITES! I am so glad I came across the Simply Nourished website. I have found quite a few gems on there. I did make just a couple of adjustments to this recipe. If you'd like to see the original recipe you can find it here.

The number one problem with Shepherd's Pie is that it can be bland. That is not the case here. The flavor is great, the textures are great, and the sweet potato topping makes my tummy feel great. Enjoy!


Sweet Potato Shepherd's Pie

1 lb. ground beef
2 medium carrots, peeled and chopped (I did about 15 baby carrots)
½ green pepper, chopped
1 small onion, chopped
2 cloves garlic, minced

6 oz. can tomato paste
½ tsp. dried rosemary
¾ tsp. chili powder
¼ tsp. sea salt or to taste
¼ tsp. black pepper

Sweet Potato Topping:
2 medium sweet potatoes, peeled and cubed (aka "yams")
1 T. coconut oil
½ tsp. chili powder
¼ tsp. sea salt

Step 1:
Peel sweet potatoes, chop, then either steam or bake until soft. 

Clover's Note: I put my chopped sweet potatoes on a baking sheet and then popped them in the oven at 450 degrees for about 15-20 minutes.

While your sweet potatoes are baking...chop the rest of your vegetables.

Step 2:
In a skillet on medium heat, brown ground beef, drain fat and then set aside.

In the same hot skillet, saute chopped carrots, onions, green pepper, and minced garlic. 


Clover's Note: I added just a little bit of coconut oil to the vegetables and sauteed them until the onions were translucent and the carrots were almost soft. (I like my cooked carrots to have a bit of a bite. If you like yours softer just cook them a bit longer.)

Once the carrots are done, stir in the tomato paste, seasonings, salt and pepper.

Step 3:
Throw the cooked sweet potatoes into your blender (we use a Blendtec) and process until smooth. Thoroughly mix in the coconut oil, chili powder, and salt.


Clover's Note: I am paranoid about bland Shepherd's pie...So I put the cooked sweet potatoes and coconut oil in the Blendtec and blended it until it was smooth. Then I scraped the mixture into a bowl and thoroughly mixed in the chili powder and salt. I didn't want to risk any of my seasoning being left behind in the crevices or blades of my Blendtec.

Step 4:
Transfer the meat filling into a 9.5" pie pan (or 9x9 pan). Spread the sweet potato topping evenly over the top.

Bake at 375 degrees for about 20 minutes. Remove from oven and serve.
