Mustard Chicken
4-5 boneless skinless chicken breasts
1/2 cup balsamic vinegar (Read your labels! Look out for sugars or additives!)
2 T. dijon mustard
6 cloves of garlic, minced
Place chicken in bottom of crock pot. In a glass bowl whisk together balsamic vinegar and mustard, then add in garlic cloves and stir. Pour mixture over chicken breasts.
Turn crock pot on low heat and cook for 7 hours until chicken is well cooked and shreds easily. (Our crockpot cooks the chicken in almost half the time, so keep an eye on it.)
Serve over fresh lettuce as a salad, or over cauliflower rice. It also makes tasty lettuce wraps! :) Enjoy!
