Fantastic "Faux"tmeal

Years ago I learned my body rejects oats. It was a sad day. I have MISSED having oatmeal in the morning! This "faux"tmeal looks like oatmeal, but it tastes SO good! I love adding some cinnamon, fresh blueberries and chopped strawberries. (You can also use this to make banana pancakes on the griddle!)

4 ripe bananas
4 eggs
4 pinches of baking soda
4 splashes of vanilla

In a bowl, mash bananas with a fork until it is almost smooth. Using your fork, beat in the eggs until you have a smooth consistency. Stir in the baking soda and vanilla. 

Heat the coconut oil in a skillet. Pour the entire banana mixture into the skillet. Let sit for about 30 seconds, then scramble. Continue gently mixing and flipping until the mixture is cooked through and crispy golden on the outside.

Put it in a bowl and top with: cinnamon, fresh blueberries, chopped strawberries, chopped nuts, etc.
