Quick, tasty, always a family pleaser! Also this is a great one to feed a crowd!
White Rice, prepared according to package directions
1 can chicken (break up chunks with a fork)
1 can cream of chicken soup
Healthy dollop of sour cream (or substitute with a swig of milk)
Squirt of lemon juice
Toppings may include but are not limited to:
shredded cheddar cheese
chow mein noodles
pineapple tidbits
tomatoes, chopped
celery, chopped
green onion, chopped
carrots, julienned
shredded coconut

While the rice is cooking, in a separate pot combine the canned chicken, cream of chicken soup, sour cream, and lemon juice and bring to a simmer.
When serving: individuals dish up a pile of rice, top the rice with chicken sauce, and then choose from the array of toppings.
